    How this converter works

    Where the numbers come from

    Every gram value comes from the same ingredient database behind the 81 ingredient pages on this site. A cup is treated as 236.6 ml, a tablespoon as 1/16 cup and a teaspoon as 1/48 cup. Ounces and pounds are weights, so they convert without needing to know the ingredient at all — that is why an unfamiliar ingredient measured in ounces still gets a gram value. Localised spoon measures are supported too: German EL and TL, French cuillère à soupe and cuillère à café, Spanish cucharada and cucharadita, Italian cucchiaio and cucchiaino all use their standard 15 ml and 5 ml.

    What it deliberately will not do

    If an ingredient is not in the database, the line is passed through unchanged and marked. We do not fall back to an average density: a plausible-looking wrong number is worse than an honest gap, especially in baking where a 20 % error in flour is the difference between a tender cake and a dense one. Short forms like "flour" or "sugar" are resolved to the most common variant and labelled as an assumption, so you can see and correct it. The same applies to local cup words: Tasse, tasse, taza and tazza are read as a US cup and labelled as an assumption on the line, because national cup volumes genuinely differ — a German Tasse is closer to 150 ml than to 236.6 ml.

    Why volume is imprecise in the first place

    Scaling a cup weight down to a teaspoon assumes the ingredient packs identically at both scales, which is not quite true — a teaspoon of flour is more affected by how it was scooped than a cup is. For small amounts of leaveners and spices the gram value is a good guide rather than a laboratory figure. For flour, sugar and butter, where quantities are large, the conversion is reliable.
